Inspector Comments:
--In the walk in cooler on the middle wire shelf was 2 cartons of raw shell eggs above a box of broccoli and a box of oranges. COS. PIC moved eggs to the bottom shelf. No leakage detected.
--The handwashing sinks in the kitchen and service area had no soap. COS. PIC supplied soap.
--Disclosure was on the menu but not the reminder. COS. Wall plaque was printed off and posted.
--The handwashing sink between the kitchen and service area had water. that only reached 72F. Other hand sinks will be used until fixed. Not COS.
--No parasite destruction form was available at time of inspection. COS. Supplier was called and provided.
--No paper towels or other hand drying provisions at the handwashing sinks located in the kitchen and service areas. COS. PIC supplied paper towels.
--Rice is being acidified for sushi without a HACCP plan
--Rice is acidified but no HACCP plan is available. While a decision is made to either use TPHC or attain a HACCP, TPHC will be used. Not COS.
--There is food and grease build up through out the kitchen and walk in coolers. This can attract pests.
