Jiro Ono, 98, is a legendary Japanese sushi chef whose 3-Michelin-starred restaurant Sukiyabashi Jiro sits in a Tokyo subway station. He began working in restaurants at age 7 and opened his establishment in 1965. His famous 10-seat restaurant serves a precise 20-piece omakase menu ($270) and is known for extremely rigorous apprentice training.
